Chef Jenner Tomaska has spent his career refusing easy definitions. His background spans Dairy Queen and sports bars, Next Restaurant and Lincoln Park’s Michelin-starred Esmé and it is precisely that range that makes him one of Chicago’s most compelling culinary voices. At The Alston, he brings every chapter of that story to the table.

Known for his relentless drive and his gift for building teams, Tomaska honed his craft alongside some of Chicago’s most celebrated chefs, including Grant Achatz and Erick Williams. That foundation in classical French technique, layered over a deep respect for Midwestern ingredients and tradition, defines everything he puts on a plate.

The Experience

Where Every Detail Has a Reason

At The Alston, the meal begins long before you sit down. Our exclusive partnership with Vander Farmers in Sturgis, Michigan means that at least one full head of Full-Blood American Wagyu arrives at our kitchen each week — raised hours away, not oceans apart. Our butcher team hand-selects prime cuts of Filet, Ribeye, and New York Strip and moves them into our onsite meat locker, where they dry-age for 21 to 30 days. The result is a steak that is rich, nutty, and unmistakably distinct.

Chef Tomaska’s menu extends well beyond the cut. French-inflected sauces, seasonal Midwestern produce, and a caviar program that rivals any fine dining room in the city round out a menu that is as considered as it is satisfying. Every plate is a conversation between the wood fire and the kitchen — between the primitive and the precise.

The room was built to match. Spanning 350 seats across a dining room inspired by the grand salons of 1920s Paris, The Alston is anchored by a dedicated Champagne bar, a year-round terrace with sweeping views of River North, and a wine program curated by Master Sommelier Ken Fredrickson. For those who want more, an invitation-only Members’ Club sits tucked behind the wine cellar.

This is not a steakhouse that happened to hire a great chef. It is a great chef’s vision of what a steakhouse can be.
